Breakfast Bread
This hearty bread is a great start to anyone's morning!

Ingredients
3 eggs
2 tsp vanilla
1/4 cup honey or maple syrup
1/4 cup flour
1 cup wheat flour
1/2 tsp salt
1/2 tsp baking soda
2 cups dried fruit - cherries, blueberries, cranberries, fits, dates, apricots, and/or raisins
2 cups nuts - walnuts, hazelnuts, pecans, almonds, pistachios, and/or pepitas
Directions
Step 1.
Preheat oven 350F. Prepare a 9” loaf pan with non-stick spray and parchment paper, set aside.
Step 2.
In a large mixing bowl, whisk together wet ingredients until blended.
Step 3.
In a separate bowl, whisk dry ingredients, add in fruit and nuts and add to wet ingredients. If batter is stiff, add a little more buttermilk. Turn into prepared pan and smooth top evenly. Bake for 45-50 minutes or until browned and toothpick comes out clean. Best served toasted.
Step 4.
Keep bread in refrigerator sliced and wrapped in plastic wrap. Bread can also be frozen.
