Morning Glory Muffins

A hearty muffin for breakfast or an after school snack!

Ingredients

  • 1/2 cup old fashioned oats

  • 3/4 cup flour

  • 3/4 cup wheat flour

  • 3/4 cup brown sugar

  • 1/2 cup shredded coconut (non-sweetened)

  • 1 tsp ginger

  • 2 tsp cinnamon

  • 1/2 tsp salt

  • 1 North Bay Produce Apple, cored and grated with skin on

  • 2 cups carrots, peeled and greated

  • 2 tsp baking soda

  • 3 eggs

  • 2/3 cups oil

  • 2 tsp vanilla

  • 2 TBS molasses

  • 1/2 cup dried cherries and/or blueberries

  • 1/2 cup sliced almonds

Directions

Step 1. 

Preheat oven to 375F. Prepare 14 muffin cups with non-stick spray.

Step 2. 

In a large bowl, mix dry ingredients and sugar and whisk together. Add grated carrots and apples stirring to combine.

Step 3. 

In a separate bowl, whisk wet ingredients and pour into dry mixing to combine. Add in dried fruits and nuts and stir well. Fill muffin cups ¾ way full and bake 18-20 minutes.

Step 4. 

Remove from oven and run knife around sides. Transfer to wire rack to cool. Can be frozen.
