Apple Upside Down Cake
A fall version of everyone's favorite pineapple cake!

Ingredients
Topping:
1/4 cup butter, softened
1/2 cup dark brown sugar
1/2 tsp cinnamon
1 large North Bay Produce Apples, peeled, cored and sliced thin (Fuji or Honeycrisp work great)
Cake:
1 1/2 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp clove
1/2 cup butter, softened
2/3 cup sugar
2 eggs, room temperature
2 tsp vanilla
1/2 cup buttermilk
Directions
Step 1.
Preheat oven 350F. Prepare 9 inch cake pan with parchment paper and non-stick spray. In a small bowl, mix butter, sugar, and cinnamon until smooth. Spread on bottom of prepared of pan. Arrange slices of apples in a pretty presentation onto of butter mixture, set aside.
Step 2.
In a medium bowl, whisk dry ingredients and set aside.
Step 3.
In a large bowl, beat butter and sugar until smooth and fluffy. Add eggs, one at a time mixing well after each. Add vanilla and stir until combined. Alternate dry ingredients and buttermilk into wet ingredients blending after each addition. End with flour.
Step 4.
Pour batter carefully over apple mixture. Bake for 35-40 minutes until toothpick comes out clean. Cool in pan for ten minutes, take a knife around the edge and flip gently onto a serving platter. Serve warm or at room temperature.
