Refrigerator French Dilly Beans (1 quart jar)

Ingredients
½ pound or more yellow and green French beans (rinsed and trimmed if necessary)
2 TBLS pickling salt
1 ½ cups water
2 cups white vinegar
2-3 cloves of garlic (purple lends a pretty color)
1 tsp dried red chili flakes
4 dill flowers
2 TBLS sugar
Directions
Step 1.
Prepare your jar by sterilizing a clean jar in boiling water. Leave jar in hot water to keep warm.
Step 2.
Trim beans to make sure you have ½ inch of headspace between the beans and the top of the jar.
Step 3.
In a saucepan, bring salt, sugar, water and vinegar to a boil over medium high heat. Heat until salt and sugar have dissolved.
Step 4.
Drain water from hot jar and add beans, chili flakes, dill flowers and garlic cloves to hot jar being careful to not burn hands on the hot jar. Make sure you pack in enough beans that you cannot pack in any more. Then cover in hot vinegar brine using a funnel leaving a ½ inch of headspace at the top; you might not use it all. If you put enough beans in they should not rise that much.
Step 5.
Take a knife or chopstick to make sure all air bubbles are out of the liquid and lid. Let beans cool to room temperature before refrigerating for a least 3 days to a week before eating for best flavor.
