French Green Bean Nest with Egg

Ingredients
4 oz French green beans
1 TBLS water
2 tsp olive oil or melted butter
Sour dough baguette
1 egg (per person)
Fresh basil (for garnish, optional)
Directions
Step 1.
Pre heat oven to 350 F.
Step 2.
In a small sauté pan on medium high heat add water and French beans cooking until water is evaporated and beans are tender. Make sure they are bendy!
Step 3.
On a parchment lined baking sheet, place a baguette slice horizontally touching edges. Start placing the cooked French beans in a nest shape and make sure the middle where the baguette edges touch only has a few beans to make a “nest floor”. Continue to weave or bend the beans to look nest shaped but making sure the walls of the nest are high enough to handle the cracked egg when it is placed in the center. When you are happy with your “nest”, crack an egg in the center and drizzle the bread with olive oil or melted butter.
Step 4.
Bake in 400 F oven until egg is your desired doneness and the baguette is toasted. Garnish with fresh basil, salt and pepper to taste. Serve immediately.
