Individual Breakfast Pizza with Snap Peas and Egg

Ingredients

  • Naan bread (1 per person)

  • 1 tsp olive oil

  • ¼ cup spinach

  • ¼ green pepper (sliced thin)

  • ½ cup sugar snap peas

  • ¼ cup feta cheese

  • ½ ripe avocado (sliced thin)

  • Fresh basil (for garnish)

  • 1 egg (per person)

Directions

Step 1.

Preheat oven to 400 F and cover a baking sheet with parchment paper. Set aside.

Step 2.

In a medium sized sauce pan, place spinach and snap peas and sauté until spinach is wilted and snap peas are crisp tender.

Step 3.

Place naan bread on baking sheet and brush with olive oil. Assemble wilted spinach, feta cheese, green pepper slices and sugar snap peas over naan bread leaving a ¼ inch to ½ inch of the edges exposed. Crack egg in center and place in 400 F oven and bake until egg is your preferred doneness and the feta has melted.

Step 4.

Take out of oven and garnish with sliced avocado and fresh basil leaves, Salt and pepper to taste. Serve immediately.
