Blackberry Tiramisu Trifle

Ingredients

  • 6 oz lady fingers

  • 1 ½ pounds blackberries + extra for garnish

  • 1 pound mascarpone cheese

  • 1 8 oz package of cream cheese

  • 1/2 cup granulated sugar

  • 2 teaspoons cornstarch

  • 3/4 cup heavy cream

  • 4 tablespoons honey

  • 1 lemon (juiced)

  • 2 teaspoons vanilla extract

  • 2 tablespoons water

  • Mint leaves for garnish

Directions

Step 1.

In a small saucepan, add 1 pound of blackberries with lemon juice, vanilla extract, honey, and 2 TBLS of water.  Bring to a simmer and cook until blackberries have broken down. If blackberries need help reducing use a potato masher or the back of a large spoon.  Allow to cool for 15 minutes.

Step 2.

Once cooled off, strain the blackberry sauce separating the liquid from the solids. Discard solids. Refrigerate while preparing the mascarpone mousse.

Step 3.

In a mixer bowl, whip together the heavy cream with 1 TBLS granulated sugar mixed with 2 tsp corn starch. Transfer to the refrigerator and keep cold until ready to use.

Step 4.

In a different mixer bowl, cream together cream cheese with the remaining granulated sugar using the mixer with the whisk attachment. Start adding the mascarpone cheese a little bit at a time until incorporated and fluffy.

Step 5.

Using a spatula, fold the chilled whipped cream into the bowl with the mascarpone and cream cheese mixture and gently combine them together.

Step 6.

Prepare 4 medium size glasses or 1 trifle dish to assemble your tiramisu.

Step 7.

Dip the ladyfingers in the berry sauce gently and layer them in the bottom of the glasses or truffle dish. Add a layer of the mascarpone mixture, followed by a few whole blackberries.

Step 8.

Repeat the layering until you run out of ingredients.

Step 9.

Refrigerate for a couple of hours or until set. Garnish with whole blackberries and mint leaves.
