Asparagus Sheet Pan Side Dish
The Spring and Summer side dish we can’t get enough of!

Ingredients
1 pound asparagus spears with woody stems removed
1 pound mixed color grape tomatoes
Drizzle of olive oil
2 large sprigs fresh basil, slightly torn
Salt and pepper to taste
Cheese sauce (ingredients below)
Cheese Sauce
2 cups freshly grated sharp white cheddar cheese
1 cup 2% milk
1 tablespoon cornstarch
¼ teaspoon garlic powder
¼ teaspoon pepper
¼ teaspoon paprika (optional)
Directions
Step 1.
For the cheese sauce, add the freshly grated cheddar cheese, milk, cornstarch, garlic powder, pepper, and paprika to a saucepan and stir over medium heat until to desired thickness (around 5 - 10 minutes)
Step 2.
Prepare a half-sheet pan with parchment paper and add asparagus spears to the top of the tray and the grape tomatoes to the bottom of the tray. Drizzle with olive oil and sprinkle with salt and pepper.
Step 3.
Bake at 425 F for 15 minutes or until the tomatoes have wilted and the asparagus is tender.
Step 4.
Top asparagus with cheese sauce and top all veggies with freshly torn basil leaves.
