Asparagus and Pepper Saute

An easy and delicious side dish for your next cookout.

Ingredients

  • 1/2 pound asparagus spears with woody stems removed

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 2 TBLS olive oil

  • 2 cloves crushed garlic cloves

  • 1 tsp dried thyme

  • salt and pepper to taste

Directions

Step 1.

In a large, non-stick skillet, add olive oil and peppers, and sauté until the peppers start to soften slightly.

Step 2.

Cut asparagus spears in half and add to the pan. Sauté for 4-5 minutes until asparagus is bright green and crisp tender.

Step 3.

Add crushed garlic and stir for another minute until fragrant.

Step 4.

Sprinkle dried thyme over vegetables and season with salt and pepper to taste. Serve immediately.
