Turkey Pinwheels with Dried Cherries

Serves: 10

Ingredients

  • 2 pounds sliced deli turkey

  • 1 pkg burrito size or larger flour tortillas

  • 2 cups dried cherries

  • 8 oz. arugula or arugula/baby spinach mixture

  • 16 oz. finely shredded sharp cheddar cheese

  • 8oz pre-packaged garden vegetable cheese spread (like Alouette)

  • ¼ cup mayonnaise

  • 8 oz. cream cheese

  • 1 tsp fresh thyme

  • 2 tsp fresh basil (minced)

Directions

Step 1. 

In a medium sized bowl, blend cream cheese, garden vegetable cheese spread, and mayo together until combined and smooth. Fold in fresh herbs and set aside.

Step 2. 

To assemble pinwheels, start with a flour tortilla and spread cream cheese mixture in an even layer. Add a layer of shredded cheddar cheese, dried cherries and top with greens. Press down lightly and top with a layer of deli turkey. Start at end closest to you and tightly roll the tortilla into a log.

Step 3. 

With seam side down, cut off end pieces with a sharp knife. Cut the remaining log into five equal-sized pinwheels and place on a platter. Repeat with the remaining ingredients. Serve the same day or can be refrigerated overnight on a covered platter.
