Strawberry & Beet Salad

Ingredients
Dressing:
1 ½ tablespoons shallots, finely chopped (can use red onion)
3 tablespoons extra virgin olive oil
1 ½ tablespoons balsamic vinegar
1 ½ teaspoons honey
¼ teaspoon cayenne pepper
Salad:
5 ounces organic arugula
1-pound North Bay strawberries, sliced
5-6 pieces steamed & peeled beets, sliced
2 tablespoons toasted pine nuts
Directions
Step 1.
Add all the dressing ingredients to a mason jar. Cover with a lid and shake.
Step 2.
Add arugula to a large bowl and top with prepared dressing.
Step 3.
Top the arugula with strawberries, beets, and toasted pine nuts.
Step 4.
Toss and serve immediately.
