Roasted Brussels Sprouts with Maple Dried Cranberries

Ingredients
2 pounds Brussels sprouts, ends trimmed and cut in half (if some are large, cut into quarters)
4-5 Tablespoons olive oil
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
3/4 cup dried cranberries
2 Tablespoons maple syrup
Directions
Step 1.
Preheat oven to 400 degrees (F).
Step 2.
In a small bowl, place cranberries and maple syrup. Stir to coat and set aside.
Step 3.
On a large baking sheet, mix together the Brussels sprouts, olive oil, kosher salt, and black pepper.
Step 4.
Spread out the Brussels sprouts evenly on a large baking sheet. Cut side halves should be facing down.
Step 5.
Bake for 25-30 minutes or until crisp on the outside and tender on the inside.
Step 6.
Remove from oven. Place in bowl and toss with maple infused cranberries.
