Red Curry Pork with Snow Peas & Tomatoes

Ingredients

  • 1 can full fat coconut milk

  • 1/2 cup chicken stock

  • 1 pint Roma tomatoes, quartered

  • 1 tablespoon red curry paste

  • 1 tablespoon fish sauce

  • 2 teaspoons brown sugar

  • 3/4 lb. thick-cut boneless pork chops, cut into 1/4 inch slices

  • 8 oz. snow peas

  • 6 oz. mushrooms

  • Salt and pepper to taste

  • Sriracha sauce

  • Steamed rice (optional)

Directions

Step 1.

In a large saucepan over medium heat, mix in coconut milk, stock, tomatoes, mushrooms, red curry paste, fish sauce, and sugar. Simmer for 10 minutes until the tomatoes start to break down.

Step 2.

Add pork and simmer for 5 minutes.

Step 3.

Add snow peas and cook for 2-3 minutes until the pork is cooked through and tender and the peas are tender-crisp and bright green.

Step 4.

Add siracha, salt, and pepper to taste.

Step 5.

Serve over rice (optional)
