Raspberry & Strawberry Cottage Cheese Toast

Ingredients
2 slices of grainy bread, toasted
1 cup cottage cheese
1 teaspoon almond extract
1/2 cup strawberries, chopped
6 oz. raspberries
Salt & pepper
Honey (optional)
Mint leaves (optional)
Directions
Step 1.
Preheat oven to broil.
Step 2.
In a small bowl mix drained cottage cheese (or small curd if using) and stir in almond extract.
Step 3.
Place toasted bread on baking sheet covered in aluminum foil. Top with cottage cheese mixture.
Step 4.
Place baking sheet in oven and broil 5 minutes or until cottage cheese is warmed and just starting to bubble at the corners.
Step 5.
Take out of oven and top with chopped strawberries, raspberries, mint leaves, salt, white pepper and honey (optional).
