Mini Berry Hand Pies

Our take on a healthier version of a traditional pie.

Ingredients

  • 1 package pie crust, 2 sheets

  • 1 cup berries, favorite variety or mixed

  • 2 tbs coconut oil, melted

Directions

Step 1. 

Preheat oven to 425F. Roll out pie crusts and stack them on top of each other.

Step 2. 

Using a pizza cutter or cookie cutter, cut out desired shape of hand pies.

Step 3. 

On a parchment lined cookie sheet, place the bottom half of the pie crust down.

Step 4. 

Add desired fruit to pie crust, leaving approximately 1 inch of space on all ends.

Step 5. 

Place top half of pie crust over fruit. Using a fork, press the edges of the pies together to seal.

Step 6. 

Brush the tops of each pie with the melted coconut oil and place in oven for approximately 12 minutes or until edges are golden brown.

Step 7. 

Serve pies warm with ice cream as dessert or at room temperature for a quick treat.
