Irish Soda Bread With Cherries

Easy bread to make and serve warm with butter and jam!

Ingredients

  • 4 cups flour

  • 4 TBS sugar

  • 1 tsp baking soda

  • 1 TBS baking powder

  • 1/2 tsp salt

  • 1/2 cup butter, softened + 1/4 cup, melted

  • 1 1/4 cup buttermilk

  • 1 egg

  • 1/2 cup North Bay Produce Dried Cherries (soaked in boiling water for 10 minutes and drained)

Directions

Step 1. 

Preheat oven to 375 F. Grease and parchment baking sheet and set aside. Can use a cast iron frying pan that is well greased.

Step 2. 

In a large bowl, mix flour, sugar, baking powder, baking soda and salt. Whisk together until combined. Add 1/2 cup butter, 1 cup buttermilk, softened dried fruit and egg to dry mix and combine. Flour work surface and turn out dough , kneading briefly. Shape into disk and place on prepared sheet or cast iron pan.

Step 3. 

Whisk 1/4 cup butter and remaining buttermilk and brush loaf liberally with mixture. Cut an X in the loaf and bake for 45 minutes, basting loaf every 15 minutes with butter/milk mixture. Transfer to wire rack to cool. Best served slightly warm.
