Dried Cherry and Citrus Salad with Salmon

Ingredients

Salad:

  • 1 pound chopped romaine salad mix

  • 1 cup strawberries (quartered)

  • ¼ cup dried cherries

  • 1 can mandarin oranges (or 1 segmented orange)

  • ½ pound salmon (grilled) chunked into bite sized pieces

  • ¼ cup shaved parmesan cheese

Dressing:

  • 1/2 cup olive oil

  • 1/2 cup fresh squeezed orange juice + zest of one orange

  • 2 Tbs honey

  • 1 tsp salt (more to taste)

  • 1/2 tsp fresh ground pepper

  • ½ tsp garlic powder

Directions

Step 1.

In a large bowl add chopped romaine salad mix, oranges, strawberries, dried cherries, salmon chunks and shaved parmesan.

Step 2.

Place all dressing ingredients in a Mason jar and shake vigorously. The dressing can stay at room temperature for up to one week.

Step 3.

Serve dressing on the side.
