Brussels Sprouts Bake with Bacon and Eggs

Ingredients

  • 6 large eggs

  • 6 slices of cooked bacon chopped

  • 1 TBLS olive oil or reserved bacon fat

  • 1 1/2 cups of Brussel sprouts (cleaned and halved)

  • ½ cups heavy cream

  • ¼ cup water

  • 1 cup shredded Monterey jack cheese

  • 1/2 cup of smoked Gouda or gruyere cheese (shredded)

Directions

Step 1.

Heat oven to 400 F and grease an 8 x 8 baking dish (or equivalent volume) and set aside.

Step 2.

Cook bacon per package instructions until crispy. Set aside to drain on paper towels, or can be made a day in advance and refrigerated until use.

Step 3.

In a medium sauté pan over medium high heat, add oil and Brussels sprouts sautéing until sprouts are fork tender, about 5 - 7 minutes. Place Brussels sprouts on the bottom of the baking dish and top with sliced Gouda or gruyere cheese, set aside.

Step 4.

In a medium bowl, Add eggs, heavy cream and water and whisk until combined.

Step 5.

Pour egg mixture over Brussels sprouts and Gouda/gruyere and sprinkle with shredded Monterey jack cheese. Sprinkle with bacon and bake for 25 minutes or until bubbly and the eggs are set. Cool 10 minutes before slicing and serving.
