Blueberry Muffin Energy Bites

Ingredients
1 cup Medjool dates (pitted) soak in a small amount of boiling water if dates are too dry
½ cup old fashioned oat meal
2/3 cup blueberries (fresh)
2 TBLS pumpkin or sunflower seeds
1 tbsp Lemon Juice
1 tsp lemon zest
¼ cup shredded coconut (unsweetened)
1 TBLS ground flax seeds
Directions
Step 1.
First crush blueberries in a blender and add the remaining ingredients. Mix everything well until a sticky dough has formed.
Step 2.
Place dough in a medium sized bowl and cover with plastic wrap. Refrigerate for 30 minutes or until dough has firmed up to be handled easily.
Step 3.
Form the dough into small balls (using a small cookie scoop or wet hands) and place on parchment lined cookie sheet.
Step 4.
Return to refrigerator for 30 minutes to firm up again and transfer to sealed container (using parchment or wax paper between layers) and keep refrigerated. Makes 20 energy balls.
