Berry Chia Pudding

Ingredients

  • 1 cup blueberries

  • 1/2 cup raspberries

  • 1/2 cup blackberries

  • 2 cups of coconut milk

  • 1 tsp vanilla

  • 2 TBLS maple syrup

  • 1/2 cup chia seeds

Directions

Step 1. 

In a blender, combine chia seeds, blueberries (reserving a few for the top of each cup) coconut milk, maple syrup, and vanilla until combined.

Step 2. 

Ladle mixture into 4 ramekins or small glass dishes.

Step 3. 

Cover with plastic wrap and chill half hour to set up.

Step 4. 

Top with fresh berries divided up between the 4 cups.
