Baked Oatmeal with Apples

Ingredients

  • 1 ½ cups whole milk

  • ½ cup applesauce

  • ⅓ cup pure maple syrup

  • 2 tsp pure vanilla extract

  • 2 large eggs

  • 3 cups old fashioned oats

  • ½ cup packed light brown sugar

  • 1 ½ cups diced apple (Gala or your favorite apple)

  • 2 ½ tsp ground cinnamon

  • 2 tsp baking powder

  • ¼ tsp salt

Directions

Step 1.

Preheat oven to 350°F. Spray 6 oven safe ramekins with cooking spray.

Step 2.

In a medium size mixing bowl, whisk together milk, apple sauce, maple syrup, vanilla and eggs until fully blended.

Step 3.

Add oatmeal, brown sugar, 1 cup apples, cinnamon, baking powder and salt. Mix well, until apples are evenly distributed.

Step 4.

Use a 1/2 cup measuring cup to divide mixture evenly between muffin cups. Divide remaining apples between muffin cups pressing into mixture.

Step 5.

Bake for 25-30 minutes until lightly puffed and golden. Serve immediately.
